Combine almond milk, chia, cinnamon and maple syrup. Let stand for 5 minutes, then stir so the chia seeds don't collect on the bottom.
In the meantime, fry the apple pieces in the coconut oil with cinnamon and maple syrup for about 10-15 minutes until the apple is soft. Set aside.
Make the crumble by mixing the ingredients together.
Make layers in a glass of the chia pudding, then the apple, then chia again and finish with the crumble
