Fennel and chicory salad with apple and raisins

This super simple fennel and chicory salad must be the one I make the most. And for good reason as it is delicious and ready in a flash.

In order to make the salad you need only a handful of ingredients. I like to use red chicory but you can use the white one as well, if you prefer. The red ones aren’t always available so going for white is fine too. The red just looks better in the bowl and I think the taste is somewhat more bitter than the white.

Back in the day; all chicory was bitter but apparently people don’t like bitter so the made sure the chicory got less bitter over time. Which I think is a shame. Bitter vegetables tend to be really good for your digestive system and this fennel and chicory salad could well do with a bit of bitter to counteract the sweetness of the raisins and the apple.

To make the salad you basically just chop all the veggies and clean and cut the apple. You then add those all to a bowl, shake it around and turn over into a serving bowl.

Mix the ingredients for the dressing and you’re ready to go. I’ve used mayonnaise here with a sweet vinegar (I used peach vinegar but apple cider or balsamic vinegar would work really well too.

To switch things up a bit you could add some mustard to the dressing if you like.

Ingredients
  

  • 1 fennel bulb thinly sliced
  • 2 chicory thinly sliced
  • 1/2 avocado in cubes
  • 1 apple in cubes
  • 2 tbsp raisins
  • 2 tbsp pine nuts toasted

Dressing

  • 2 tbsp mayonnaise
  • 1 tbsp vinegar or lemon juice
  • pepper and salt to taste

Instructions
 

  • Slice the vegetables and add them to a bowl. Mix with the apple cubes, the raisins and the toasted pine nuts.
  • Add the avocado.
  • Make the dressing by mixing the mayo with the vinegar and add pepper and salt to taste.
