Cauliflower popcorn

My friend always makes fun of me whenever I make something featuring cauliflower. I’ve made cauliflower ‘ricepudding‘, cauliflower ‘steak’ and yes, now cauliflower popcorn. Of course I know that it does not – in any way except looks – resemble real popcorn. But that’s the thing with ‘look-a-like’ dishes right? What do you call it? I opted for cauliflower popcorn in this case, so excuse me for it not being like popcorn. Still pretty delicious though!

Four ingredient cauliflower popcorn

This super easy recipe for cauliflower popcorn has a total of four ingredients. Yes, that is even including the salt and the olive oil. Which you normally don’t even count, but otherwise it would almost be a one ingredient recipe. It’s my favorite way of preparing cauliflower. It’s just simply roasted in the oven until the edges are delicious and crispy.

Add some flavor

Of course the biggest part of making this resemble a snack is the seasoning. I kept it super simple here by mixing the cauliflower florets with smoked paprika (the ground kind) and I added some sea salt and olive oil. That said, it is also super easy to vary with this recipe. I like to change the seasoning every single time.

Roast in the oven

Once you’ve seasoned the cauliflower florets it’s time to roast them. I place it all on a baking sheet and sprinkle olive oil, salt and smoked paprika over the top. Give it a shake and then it goes into the oven. It should take roughly 20-25 minutes for the cauliflower to cook through. The total time depends on the size of your cauliflower, so make sure to check if it is cooked through by poking it with a fork.

Serve with a delicious dip

I like serving this cauliflower popcorn with an easy dip. My favorite (and current obsession) is using crispy chili oil mixed with mayonnaise and some lemon juice. Super easy and sooo tasty. If you like it to be a little sweeter you can also mix the mayonnaise with some sweet chili sauce instead. That still has a little bit of heat but is not as strong as the crispy chili oil.

Does this really resemble popcorn? Well no I gotta be honest here. It does not. But it's a fun snack and in terms of looks, it does kind of look like popcorn.

Ingredients

  • ½ cauliflower ( in small florets)
  • 1 tsp salt
  • 1 tsp smoked paprika (ground)
  • 2 tsp olive oil ( or coconut oil)

Instructions 

  • Preheat the oven to 200˚C (400˚F)
  • Put the cauliflower and the rest of the ingredients in a bowl and mix well. Then spread out on a baking sheet in a single layer.
  • Roast the cauliflower for about 20-30 minutes or until golden brown and tender.
  • Let cool completely and then transfer to a container to take with you.
