This simple and fragrant soup is perfect as a quick week night meal, is delicious and filling too.

Red bell pepper soup with ground beef

I love a good soup. It’s one of those dishes that is not only easy to make, but it is also the perfect way to get rid of any leftover veggies in the fridge. For this tasty bell pepper soup (which I always call paprika soup) you need just two red bell peppers but you can add more if you want. Another way to enhance the flavor is to add some smoked bell peppers in the soup as well.

Easy and delicious

The good news is that this bell pepper soup is also very easy to freeze. Whenever I make it, I make a large batch and then freeze the leftovers in batches of one. That way I can quickly reheat and have a meal on the go in no time.

While the soup is delicious as it is, you can add other things to it if you want. In terms of vegetables there are not a whole lot in this bell pepper soup, so you might want to add some in. Vegetables that will go very well here are for instance: courgette, eggplant, mushrooms or simply add more bell peppers in.

Change it up

If you don’t like ground beef in your soup you can swap that out for chicken. In that case you take out the beef and fry cubes of chicken. The process after cooking the chicken is the same. Instead of baking the chicken you can poach them and pull the meat apart. That will – again – give a totally different taste to the soup.

Freeze for later

If you choose to freeze the soup; make sure to use an airtight container and batch freeze. I sometimes also use plastic bags that can hold liquid well. That saves loads of space in the freezer and I can simply stack them on top of each other. The only requirement is that the bags are actually leak proof. You don’t want frozen soup all over your freezer.

Another delicious addition to the bell pepper soup is to add some chopped and fried chorizo. The chorizo can be fried in a dry pan. Let the fat go out of the chorizo and drain on paper towels to crisp up. Chop small and sprinkle over the soup.

  • Stick blender


  • 500 grams minced beef
  • 1 onion (chopped)
  • 2 garlic cloves (crushed)
  • 1 tsp italian herbs (dried)
  • 1 tsp paprika powder
  • 2 red bell peppers ( cut into small cubes)
  • 400 g tomatoes (diced)
  • 500 ml vegetable stock
  • 2 tbsp tomato puree
  • fresh parsley


  • Fry the minced meat until cooked through and crumbled in a dry frying pan.
  • Add the onion, garlic, spices, salt and paprika and saut√© gently for 5 minutes.
  • Add the red bell pepper, diced tomatoes, broth and tomato paste and simmer the soup for 25 minutes.
  • Sprinkle with parsley.
